Red Cucumber Pickles

  1. Soak cucumbers 24 hours in lime and 2 1/2 gallons water.
  2. Wash real well and soak 3 hours in cold water.
  3. Mix 1 cup vinegar, alum and red food coloring.
  4. Add enough water to the cucumbers to cover well and simmer 2 hours.
  5. Drain well.
  6. Mix 3 cups vinegar, sugar, red hots, 3 cups water and cinnamon sticks.
  7. Heat until candy and sugar dissolve.
  8. Stir often so candy will not stick to pan.
  9. Bring to a boil and pour over cucumbers.
  10. Pour off liquid each morning for 3 mornings.
  11. Bring to boil and pour liquid back over cucumbers. The 4th morning, put pan on stove and bring all of it to a boil and put in jars.
