Red Cucumber Pickles
- 2 gal. ripe, peeled and cored cucumbers
- 2 c. lime
- 2 1/2 gal. water
- 1 c. vinegar
- 1 Tbsp. alum
- 1 oz. bottle red food coloring
- 3 c. vinegar
- 12 c. sugar
- 20 to 30 oz. red hots
- 3 c. water
- 12 cinnamon sticks
- Soak cucumbers 24 hours in lime and 2 1/2 gallons water.
- Wash real well and soak 3 hours in cold water.
- Mix 1 cup vinegar, alum and red food coloring.
- Add enough water to the cucumbers to cover well and simmer 2 hours.
- Drain well.
- Mix 3 cups vinegar, sugar, red hots, 3 cups water and cinnamon sticks.
- Heat until candy and sugar dissolve.
- Stir often so candy will not stick to pan.
- Bring to a boil and pour over cucumbers.
- Pour off liquid each morning for 3 mornings.
- Bring to boil and pour liquid back over cucumbers. The 4th morning, put pan on stove and bring all of it to a boil and put in jars.
