Mojito Pork
- 1/4 cup soy sauce
- 1 teaspoon lime zest grated
- 2 limes
- 1 tablespoon hot sauce
- 2 tablespoons honey
- 2 garlic cloves minced
- 1/4 cup chopped cilantro or mint
- 1 pound boneless pork loin chops thick, cut crosswise into 1/2-inch-wide strips
- olive oil
- 1 onion large, chopped
- 1 bell pepper any color, thinly sliced
- 1/4 cup light rum
- 1 sprig cilantro or mint
- lime wedges

- In a medium mixing bowl combine the soy sauce, zest, lime juice, hot sauce, honey, garlic, and cilantro. Mix well and add the pork strips
- Marinate the pork for at least 20 minutes, or overnight if you have the time
- Heat the olive oil in a large skillet and saute the onion and pepper over medium-high heat until lightly browned, about 3 to 5 minutes. Add the pork strips, reserving the marinade for use later.
- Strip fry until pork is cooked through, approximately 3 to 4 minutes
- Remove the cooked pork, onion, and pepper to a plate or bowl
- Add the reserved marinade to the skillet. Turn the heat up to high, and when the mixture starts to bubble, add in the rum. The sauce will begin to thicken. When it reduces to the consistency of a glaze, return the pork, onion, and pepper to the pan to coat. Stir for a few seconds in order to combine all of the ingredients
- Serve over rice, garnished with sprigs of fresh cilantro and a lime wedge
