Jamaican Fruit Cake
- 1 1/2 cups flour
- 1 cup margarine
- 1 cup sugar
- 4 eggs
- 1 pound raisins
- 1 pound currants
- 1/2 pound cherries
- 1/2 pound prunes chopped
- 1 teaspoon cinnamon
- 1/2 teaspoon mixed spice
- 1/2 teaspoon salt
- 3 cups wine
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 teaspoon almond
- Soak fruits in wine overnight
- Cream butter and sugar until soft and fluffy
- Add eggs one at a time to butter and sugar mixture, beating well after each addition
- Sieve dry ingredients into butter and cream mixture, alternatively with wine and fruits
- Add vanilla, almond, cinnamon, and mixed spice to this mixture
- Pour mixture in greased and line baking tin
- Bake at 300u0b0F for 1 1/2 hours then at 275u0b0F for another 1 1/4 hours.
- Add wine daily to maintain moisture.
