Jamaican Fruit Cake

  1. Soak fruits in wine overnight
  2. Cream butter and sugar until soft and fluffy
  3. Add eggs one at a time to butter and sugar mixture, beating well after each addition
  4. Sieve dry ingredients into butter and cream mixture, alternatively with wine and fruits
  5. Add vanilla, almond, cinnamon, and mixed spice to this mixture
  6. Pour mixture in greased and line baking tin
  7. Bake at 300u0b0F for 1 1/2 hours then at 275u0b0F for another 1 1/4 hours.
  8. Add wine daily to maintain moisture.
