Chicken Asparagus Rolls
- 1/4 tsp. garlic powder
- 1/4 tsp. rosemary
- 1/2 tsp. salt (optional)
- 2 whole boneless chicken breasts, halved, skin removed and pounded to flatten
- 2 slices (1 oz.) Mozzarella cheese
- 1 pkg. frozen asparagus, thawed and drained (may substitute broccoli)
- 1/4 tsp. paprika
- 2 tsp. Parmesan cheese
- Combine garlic powder, rosemary and salt; sprinkle over chicken.
- Lay 1/2 slice cheese on each piece of chicken.
- Top with 4 asparagus spears.
- Fold long edges of chicken breast over the cheese and asparagus; secure with wooden pick.
- Sprinkle chicken rolls with paprika.
- Place seam down in 12 x 8-inch baking dish; cover with wax paper.
- Microwave on High for 3 minutes; turn and rearrange chicken pieces.
- Sprinkle with Parmesan cheese; cover and microwave on High for 2 to 4 minutes until chicken is opaque and tender.
