Shrimp And Bok Choy Noodle Bowl
- 8 ounces ramen noodles uncooked, or spaghettini
- 2 tablespoons vegetable oil
- 16 uncooked large shrimp peeled and deveined, tails intact
- 1 onion thinly sliced
- 2 cloves garlic minced
- 1 red bell pepper seeded and sliced
- 1 bok choy medium, chopped
- 1 cup reduced sodium vegetable broth
- 1 pinch red chili flakes dried
- soy sauce for serving
- fresh cilantro for garnish
- Cook the noodles in a saucepan of boiling salted water for 4-5 mins until tender. Drain, rinse under cold water and drain again.
- Heat the oil in a large wok or deep skillet over medium-high heat. Add the shrimp and stir-fry for 3-4 mins until just cooked through. Remove to a bowl. Add the onion, garlic and bell pepper to the wok and stir-fry for 1-2 mins. Add the noodles and bok choy and stir-fry for 1-2 mins. Pour in the broth and cook for 2-3 mins.
- Return the shrimp to the wok with the chili flakes. Season with soy sauce and salt and pepper to taste. Divide the mixture among four bowls, garnish with cilantro and serve.
