Lemon Pasta With Shrimp
- 1 angel hair pasta 9 ounce
- 1 tablespoon olive oil and deveined
- 1 garlic clove chopped
- 1 lemon zest of
- 1 lemon juice of
- 1/2 cup reduced sodium chicken broth
- salt to taste
- 1 pound shrimp large fresh, peeled
- 1/4 cup cream
- 1/2 cup Parmesan cheese grated
- 3 tablespoons fresh cilantro chopped
- Cook pasta in a large pot of boiling water, according to package directions.
- Drain and return to cooking pot.
- Meanwhile, in a large skillet, over medium-high heat, heat the oil.
- Add the garlic and saute until soft, do not let brown!
- Add the lemon juice and broth and bring to a boil.
- Add shrimp, cook until shrimp are opaque, about 3 minutes.
- Reduce heat to low; add cream, cheese and lemon zest.
- Cook about 3 minutes to heat through, but do not boil.
