White Fruit Cake
- 1 (8 oz.) pkg. dried apricots, cut in half (about 2 c.)
- 1 c. whole red candied cherries
- 1/2 c. whole green candied cherries
- 1/2 lb. red candied pineapple, cut into eighths
- 1/2 lb. white candied pineapple, cut into eighths
- 1 1/2 c. whole pecan halves
- 2 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1 c. butter or margarine
- 1 c. sugar
- 2 tsp. vanilla
- 1 Tbsp. grated lemon or orange rind
- 4 eggs
- 1/2 c. milk
- assorted candied fruit (for garnish)
- Combine fruits and nuts.
- Sift together the flour, baking powder and salt.
- Cream butter well.
- Add sugar gradually; cream well.
- Beat in vanilla and citrus rind.
- Add eggs, one at a time; beat well after each addition.
- Add 1/4 of dry ingredients and milk to creamed mixture.
- Continue procedure; beat well after each addition.
