Shrimp And Toast Croquettes
- 12 slices white bread
- 24 deveined shrimp peeled and
- 3 green onions finely chopped
- 2 teaspoons fresh ginger finely grated
- 1 tablespoon chopped cilantro
- 1 egg white
- 1 teaspoon cornstarch
- 1 teaspoon soy sauce
- 2 teaspoons sesame oil
- 1/2 cup sesame seeds
- 3 cups vegetable oil to deep-fry
- plum sauce to serve
- Using a 2 inch cutter, cut bread into 24 rounds. Using a food processor blitz shrimp, green onions, ginger, cilantro, egg white, cornstarch, soy sauce and sesame oil until almost smooth. Season with salt and white pepper.
- Place sesame seeds on a plate. Spread one side of each bread piece with prawn mixture. Dip bread, prawn-side down, in seeds to coat.
- Heat oil in a large heavy-based saucepan (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry, in batches, for 1-2 mins or until golden and cooked through. Using a slotted spoon, transfer to paper towels to drain. Serve with plum sauce.
