Cheese And Zucchini Tart
- 1 red onion peeled and chopped
- 3 tablespoons vegetable oil
- 5 zucchinis sliced crossways
- 9/16 pound soft cheese
- 1 egg
- 1/2 cup Parmesan cheese grated
- fresh basil
- 2 3/8 tablespoons milk
- salt
- ground black pepper
- 1 roll ready-made short pastry
- Preheat the oven to 180 degrees Celsius.
- Add the oil to a nonstick pan and heat on medium heat.
- Add the onions and saute for 5 minutes.
- Add the zucchini and saute for 10 minutes.
- Remove from the heat, and allow to cool.
- Place the zucchini mixture to a blender and add the cheeses, egg, basil and milk. Season with a pinch of salt and black pepper to taste.
- Line a pie dish with the short pastry and fill with the mixture.
- Fold over the edges of the excess pastry to form a border.
- Bake for 25 minutes or until the pastry is golden brown.
