Backpack Cookies
- 3/4 c. softened margarine
- 1/2 c. brown sugar
- 1/4 c. honey
- 2 eggs
- 1 tsp. vanilla
- 1/2 tsp. baking soda
- 2 c. uncooked oatmeal
- 3/4 c. whole wheat flour
- 1/2 c. nonfat dry milk powder
- 1 1/2 c. raisins
- 1 c. chopped nuts
- 2 c. bran flakes cereal
- Cream the margarine, sugar and honey; add eggs, vanilla and baking soda.
- Stir in oats, flour and milk powder; blend thoroughly.
- Add raisins and nuts.
- Fold in bran flakes.
- Drop by tablespoons onto a lightly greased cookie sheet.
- Flatten slightly.
- Bake 12 minutes until edges are slightly browned. These cookies freeze well, travel well and are so healthy you can feed them to the kids for breakfast.
