Vegetable Calzones
- 1 red pepper small, finely chopped
- 4 button mushrooms thinly sliced
- 1 onion small, finely chopped
- 1/2 cup pineapple
- 1 piece juice
- 1/2 cup mozzarella cheese grated
- 1 pound pizza dough
- 1 tablespoon tomato paste
- 1 egg lightly beaten
- salad greens to serve
- Preheat the oven to 400u0b0F. Lightly dust 2 baking pans with flour. Combine red pepper, mushrooms, onion, pineapple and mozzarella cheese in a large bowl.
- Divide pizza dough into 6 equal portions on a floured surface. Use a floured rolling pin to roll out each portion to a 5-inch round.
- Spread each round with a little tomato paste, taking care to leave a 3/4-inch border. Top half of each round with vegetable mixture. Brush edges with beaten egg. Fold dough to enclose vegetable filling and pinch edges together to seal. Place on prepared baking pans.
- Bake for 20 mins, until lightly browned and cooked through. Serve with salad greens.
