Pork Loin With Caramelized Orange Sauce

  1. Sprinkle the pork with salt and cinnamon. Pour a little olive oil into the bottom of a pressure cooker and saute the pork loin slightly. Add the cognac and allow the alcohol to evaporate slightly.
  2. Add the onion, orange juice, bay leaf, and pepper, and cover the pork halfway with water.
  3. Cook in the pressure cooker for 30 minutes, turn the meat, and cook for 10 minutes more, adding more water if necessary.
  4. Remove the pork from the cooker and refrigerate, overnight if possible. Reserve the juices.
  5. Place the sugar in a saucepan over low heat until a caramel sauce is formed. Add the pork loin, coating well. Remove carefully and thinly slice.
  6. Reduce the juices in a saucepan, adding the orange marmalade and the remaining caramel sauce. Let simmer until thickened.
  7. Serve the pork slices with the sauce.
