Pork Loin With Caramelized Orange Sauce
- 1 1/2 pork loin
- olive oil
- 3 oranges
- 2 onions large
- 1 cup cognac
- 2 tablespoons orange marmalade
- 4 tablespoons sugar
- black peppercorns
- bay leaves
- cinnamon
- Sprinkle the pork with salt and cinnamon. Pour a little olive oil into the bottom of a pressure cooker and saute the pork loin slightly. Add the cognac and allow the alcohol to evaporate slightly.
- Add the onion, orange juice, bay leaf, and pepper, and cover the pork halfway with water.
- Cook in the pressure cooker for 30 minutes, turn the meat, and cook for 10 minutes more, adding more water if necessary.
- Remove the pork from the cooker and refrigerate, overnight if possible. Reserve the juices.
- Place the sugar in a saucepan over low heat until a caramel sauce is formed. Add the pork loin, coating well. Remove carefully and thinly slice.
- Reduce the juices in a saucepan, adding the orange marmalade and the remaining caramel sauce. Let simmer until thickened.
- Serve the pork slices with the sauce.
