Mexican Layer Casserole
- 1 pound ground beef
- onion 1 med., chopped
- 16 ounces refried beans
- 8 ounces tomato sauce
- 1 1/2 ounces sauce mix enchilada
- 1/2 cup water
- 7 cups tortilla chips
- 1 cup shredded cheddar cheese
- 1/4 cup sliced black olives opt.
- 2 cups shredded lettuce
- tomato 1 med., chopped
- Crumble ground beef and onion together. Microwave (high) uncovered for 5 to 6 minutes or until meat is set, stirring once. Stir to break meat into small pieces, drain. Stir in beans, tomato sauce, sauce mix and water.
- Microwave (high) uncovered 6 to 7 minutes until hot and bubbly, stirring once. Place slightly crushed tortilla chips in a 12 x 8 inch glass baking dish. Spoon hot meat mixture evenly onto chips. Sprinkle with cheese and olives. Microwave (high) uncovered 2 to 2 1/2 minutes until cheese melts. Garnish with lettuce and tomatoes.
