Luscious Coconut Cream Pie
- 3/4 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. milk
- 3 eggs, separated
- 2 Tbsp. butter
- 1 tsp. cornstarch
- 1 c. flaked coconut
- 1 (9-inch) pastry shell, baked and cooled
- Combine sugar, cornstarch and salt in large microwave mixing bowl.
- Gradually add the milk, mixing well.
- Microwave 8 minutes, stirring twice.
- Remove from oven and stir small amount of hot mixture into 3 slightly beaten egg yolks; then blend egg yolk mixture into hot milk mixture.
- Microwave 2 more minutes, stirring once.
- Remove from oven.
- Add butter and vanilla.
- Mix well. Stir in coconut. Pour into pastry shell.
- Spread meringue on top of pie and bake at 350u0b0 for 12 to 15 minutes.
- Serve warm or chilled. (This is a family favorite.)
