Sweet Potato Curry With Red Beans
- 2 1/4 pounds sweet potato peeled and cut into chunks
- 2 tablespoons olive oil
- 1 red pepper deseeded and chopped
- 1 red onion chopped
- 1 clove garlic crushed
- 2 tablespoons red curry paste
- 14 ounces diced tomatoes
- 14 ounces red kidney beans drained and rinsed
- 1/2 cup vegetable stock
- 2 ounces baby spinach leaves
- rice to serve
- tzatziki sauce to serve
- Preheat oven to 400u0b0F. Toss sweet potato in a baking pan with half the oil. Bake 20-30 mins, until tender.
- Meanwhile, for the curry, heat remaining olive oil in a large saucepan. Saute pepper, onion and garlic 4-5 mins, until tender. Stir in curry paste and cook 1 min. Stir in tomatoes, beans and vegetable stock. Bring to a boil. Reduce heat to low and simmer, partially covered, 20 mins. Add sweet potato and spinach. Season to taste and serve with rice and tzatziki sauce.
