Spring Vegetable Ring

  1. Scrub potatoes.
  2. With a vegetable peeler or sharp knife, remove a thin strip of peel around center of each potato.
  3. Place potatoes in a 1 1/2-quart casserole.
  4. Add 2 tablespoons butter and the water.
  5. Cover with plastic wrap.
  6. Microwave on High for 12 to 16 minutes.
  7. Let stand, covered, while cooking beans.
  8. Place remaining butter in a large shallow bowl.
  9. Microwave on High until melted.
  10. Add remaining ingredients.
  11. Cover with plastic wrap. Microwave on High for 7 to 9 minutes.
  12. Let stand, covered, for 3 minutes.
  13. Remove cover and surround with cooked potatoes.
  14. Makes 6 servings.
