Spring Vegetable Ring
- 6 new potatoes
- 6 Tbsp. butter, divided
- 1/4 c. water
- 1 clove garlic, minced
- 1 lb. fresh green beans, cut into 1 1/2-inch pieces
- 2 large fresh tomatoes, peeled and chopped
- 1 tsp. dried basil
- 1 tsp. salt
- 1/8 tsp. pepper
- Scrub potatoes.
- With a vegetable peeler or sharp knife, remove a thin strip of peel around center of each potato.
- Place potatoes in a 1 1/2-quart casserole.
- Add 2 tablespoons butter and the water.
- Cover with plastic wrap.
- Microwave on High for 12 to 16 minutes.
- Let stand, covered, while cooking beans.
- Place remaining butter in a large shallow bowl.
- Microwave on High until melted.
- Add remaining ingredients.
- Cover with plastic wrap. Microwave on High for 7 to 9 minutes.
- Let stand, covered, for 3 minutes.
- Remove cover and surround with cooked potatoes.
- Makes 6 servings.
