Red Cabbage And Bell Pepper Slaw
- 1/2 c. white vinegar
- 1/2 c. water
- 1/4 c. sugar
- 3/4 tsp. salt
- 1/2 tsp. Dijon mustard
- 3 Tbsp. olive oil
- 1 tsp. mustard seed
- 1/2 head red cabbage, shredded (about 3 c.)
- 2 red or yellow bell peppers, cut into julienne strips
- Boil vinegar, water, sugar, salt and mustard.
- Simmer 3 minutes in open saucepan.
- In a large, heavy skillet, heat the oil until hot but not smoking.
- Add mustard seed and saute until they begin to pop.
- Stir in cabbage.
- Saute 1 minute.
- Stir in pepper and saute 1 minute.
- Add vinegar mixture and simmer for 1 minute. Drain vegetables in sieve over a saucepan.
- Transfer vegetables to bowl.
- Boil liquid until it reduces to about 3 tablespoons.
- Stir into vegetables.
- Chill, covered, overnight or 1 hour.
- Serves 4.
