Red Cabbage And Bell Pepper Slaw

  1. Boil vinegar, water, sugar, salt and mustard.
  2. Simmer 3 minutes in open saucepan.
  3. In a large, heavy skillet, heat the oil until hot but not smoking.
  4. Add mustard seed and saute until they begin to pop.
  5. Stir in cabbage.
  6. Saute 1 minute.
  7. Stir in pepper and saute 1 minute.
  8. Add vinegar mixture and simmer for 1 minute. Drain vegetables in sieve over a saucepan.
  9. Transfer vegetables to bowl.
  10. Boil liquid until it reduces to about 3 tablespoons.
  11. Stir into vegetables.
  12. Chill, covered, overnight or 1 hour.
  13. Serves 4.
