Grilled Vegetable Pastry And Kalamata Cod

  1. Mix flour, olive oil, fresh yeast, salt, water, and oregano and knead for about 10 minutes.
  2. The dough is very manageable due to the oil.
  3. Cover with a cotton cloth and let rise until doubled in volume.
  4. Preheat oven to 200u0b0C (approximately 400u0b0F).
  5. Divide dough in half and roll out two rectangles.
  6. Bake for 35 minutes.
  7. Remove from oven and let cool.
  8. Cover with strips of grilled pepper and eggplant.
  9. Add cod flakes.
  10. Top with some olives and salt flakes.
  11. If desired, drizzle with a little spicy olive oil.
