Banana And Almond Bundt Cake
- 3 bananas peeled and chopped
- 1/2 lemon juiced
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 5 eggs
- 3 cups all-purpose flour
- 5 teaspoons baking powder
- 2/3 cup whole milk or 2%
- 1 1/2 cups almonds blanched and toasted
- 1/4 pound dark chocolate melted
- Preheat oven to 325u0b0F. Grease and flour a bundt pan. Toss bananas with lemon juice.
- Cream butter, sugar and vanilla extract then add eggs, 1 at a time. Add flour and baking powder, alternating with milk. Gently fold in bananas and almonds then transfer to prepared pan and bake for 45-55 mins.
- Remove cake from oven. Allow to cool for 10 mins then remove from pan and let cool completely on a wire rack. Decorate cake with melted chocolate.
