Vegetable Pakoras
- 8 3/4 cups chickpea or gram flour
- 1 green chili long, deseeded, finely chopped
- 2 tablespoons fresh cilantro chopped
- 1 teaspoon ground turmeric
- 1 teaspoon Garam Masala
- vegetable oil for deep-frying
- 1 red pepper large, deseeded, cut into pieces
- 2/3 pound cauliflower cut into florets
- 1 zucchini large, thickly sliced on a bias
- 2/3 cup plain yogurt
- 2 tablespoons fresh mint finely chopped
- Combine flour, chili, cilantro, spices and 1 tsp salt. Gradually whisk in 1 cup water until smooth.
- Heat oil over medium-high heat. Working in batches, lightly coat vegetables in batter then deep-fry for 3 mins, or until golden and tender. Drain on paper towels. Season.
- Meanwhile, combine yogurt and mint. Season. Serve with vegetable pakoras.
