Chinese Peanut Brittle
- 2/3 cup sesame seeds
- 1 1/4 cups sugar
- 1/2 cup water
- 2 3/4 cups blanched peanuts
- 6 tablespoons maltose syrup
- 1/2 teaspoon salt
- Preheat oven to 300u0b0F. Line a large rimmed baking sheet with parchment paper. Place sesame seeds and peanuts on prepared sheet and bake 10 minutes or until golden brown. Set aside to cool.
- Attach multipurpose blade to KitchenAid(R) 7-cup food processor. Add toasted sesame seeds and peanuts, process on low speed until chopped.
- Line the bottom and sides of a 9x9-inch baking pan with parchment paper. Lightly spray with cooking spray. Combine sugar, water and maltose syrup in a heavy pot. Heat over medium heat to 266u0b0F or hard ball stage on a candy thermometer. Quickly stir in chopped sesame seeds and peanuts and pour into prepared pan. Cool until set.
- When cool, remove from pan and cut into bars. Cool completely and store in an air-tight container.
