Macaroni Chicken Surprise

  1. Mix salmon, potatoes, onion, egg and pepper until blended. Form into 8 patties, each about 3/4-inch thick.
  2. Spread crumbs on wax paper.
  3. Gently press patties in crumbs to coat.
  4. Heat oil in skillet (large, nonstick).
  5. Add patties and cook over medium heat about 4 minutes per side, until heated through, golden and crisp. Serves 4. Per serving:
  6. 344 cal., 23 g. pro., 19 gr. car., 20 g. fat, 89 g. chol., 717 mg. sod.
  7. Exchanges 1 1/4 starch/bread, 2 1/2 medium fat meat and 1 1/2 fat.
