Macaroni Chicken Surprise
- 1 broiler-fryer chicken, cooked, skinned, boned and broken into pieces
- 1 (8 oz.) pkg. elbow macaroni, cooked
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. sour cream
- 1 c. chicken broth, warm
- 1 egg, slightly beaten
- 1 Tbsp. prepared mustard
- 1 jar chopped pimento
- 2 c. coarsely shredded sharp Cheddar cheese, divided
- 1 (14 3/4 oz.) can pink salmon, drained
- 1 1/2 c. mashed potatoes (can be leftovers)
- 1 small onion, grated
- 1 large egg
- 1/2 tsp. pepper
- 1/4 c. bread crumbs
- 3 Tbsp. vegetable oil
- 1 Tbsp. lemon juice
- Mix salmon, potatoes, onion, egg and pepper until blended. Form into 8 patties, each about 3/4-inch thick.
- Spread crumbs on wax paper.
- Gently press patties in crumbs to coat.
- Heat oil in skillet (large, nonstick).
- Add patties and cook over medium heat about 4 minutes per side, until heated through, golden and crisp. Serves 4. Per serving:

- Exchanges 1 1/4 starch/bread, 2 1/2 medium fat meat and 1 1/2 fat.
