Coconut Candy
- 2 cups dessicated coconut grated
- 1 cup sugar
- 1/2 cup water
- rose syrup
- cookie mold or a flat plate
- clarified butter 'ghee'
- In a thick bottomed pan, mix your sugar and water. Heat this mixture for about 15-18 minutes.
- Take a small drop of this mixture on a flat surface and after 30 or so seconds, touch the drop with your finger. When you pull your finger away you should get around 3-4 strings away sticking from the drop to your finger. This is when you know the sugar syrup is ready for the next stage.
- At this point quickly add your coconut and the ghee giving it a quick stir.
- Grease the mold or a flat plate with ghee beforehand, now add the coconut mixture quickly onto the plate and flatten evenly. After about a minute or so using a knife run through the coconut mixture, giving it a square or rectangle shape. The mold users can skip this step.
- After about 15-20 minutes the candy should be ready to serve. To give it a little zing, take your rose or strawberry syrup slightly drizzle over the candy. Make sure not to add a lot as the candy is already sweet and a lot of syrup can make the candy saggy. Hope you enjoy making this easy recipe.
