Vegetable Beef Soup(Minestrone Di Carne)

  1. Place meat, bones and water in an extra large saucepan. Cover and bring to
  2. boil.
  3. Reduce
  4. heat
  5. and skim surface with slotted spoon.
  6. Add all the rest of ingredients except for the mixed vegetables and potatoes.
  7. Let
  8. cook
  9. 3 hours on a medium low heat. Add
  10. mixed
  11. vegetables and potatoes;
  12. cook an additional 45 minutes.
  13. Taste
  14. for
  15. salt
  16. and
  17. pepper;
  18. adjust
  19. to taste.
  20. Makes 6 to 8 servings.
