Vegetable Beef Soup(Minestrone Di Carne)
- 3 lb. beef meat and bones, washed
- 4 qt. water
- 1 onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 8 oz. tomatoes
- 1/4 lb. string beans
- 1/2 head cabbage, sliced
- 1 Tbsp. salt
- 1 tsp. pepper
- 1/2 tsp. oregano
- 2 bay leaves
- 1 frozen mixed vegetables
- 3 potatoes, peeled and cubed
- 1/2 c. barley (optional)
- Place meat, bones and water in an extra large saucepan. Cover and bring to
- boil.
- Reduce
- heat
- and skim surface with slotted spoon.
- Add all the rest of ingredients except for the mixed vegetables and potatoes.
- Let
- cook
- 3 hours on a medium low heat. Add
- mixed
- vegetables and potatoes;
- cook an additional 45 minutes.
- Taste
- for
- salt
- and
- pepper;
- adjust
- to taste.
- Makes 6 to 8 servings.
