Sea Bass With Clam Sauce

  1. Saute the garlic and chive in a skillet on medium heat with 1 tablespoon of oil.
  2. Add the flour and continue to cook.
  3. Add the white wine, allow the alcohol to evaporate for 1 minute, and add water. Stir well. Add the parsley and cayenne pepper. Continue to cook for 5 minutes.
  4. Add the clams and cover the saucepan, cook until they open, up to 10 minutes.
  5. Season the fillets with salt and black pepper and pan sear with the remaining oil. Cook for 3 minutes on the skin side 1 minute on the fillet side.
  6. Plate the fish and pour the clam sauce on top. Garnish with a few clams.
