Ham & Shrimp Jambalaya
- 2 tablespoons promise buttery spread
- 2 celery
- 1 onions medium, chopped
- 2 cloves garlic finely chopped
- 29 ounces diced tomatoes drained, reserve 1/2 cup juice
- 5 cups brown rice cooked
- 1/2 pound large shrimp
- 3/4 cup cooked ham
- 3/4 cup green peas frozen
- 1/2 cup green bell pepper diced
- 2 teaspoons dri oregano leaves, crush
- 1/2 teaspoon dri thyme leaves, crush
- 1/2 teaspoon hot pepper sauce
- Preheat oven to 375u0b0. Lightly grease 13 x 9-inch baking dish; set aside.
- Melt Promise(R) Buttery Spread in 3-quart saucepan over medium heat and cook celery and onion, stirring occasionally, 7 minutes or until vegetables are tender. Add garlic and cook 30 seconds. Stir in tomatoes, reserved juice and remaining ingredients. Season, if desired, with salt and ground black pepper.
- Turn rice mixture into prepared baking dish. Bake covered 30 minutes or until heated through.
