French Quarter Steak

  1. Trim excess fat from steak.
  2. Cut into serving size pieces. Combine flour, salt, paprika and pepper.
  3. Coat steak in flour. Reserve excess flour mixture.
  4. Saute onion and green pepper in hot oil in a large skillet.
  5. Remove vegetables and set aside.
  6. Brown steak on both sides in remaining oil.
  7. Add vegetables, rice, tomatoes and water.
  8. Sprinkle with reserved flour mixture.
  9. Cover and simmer for 1 hour, stirring occasionally.
