French Quarter Steak
- 1/4 c. all-purpose flour
- 1 tsp. salt
- 2 tsp. paprika
- 2 Tbsp. vegetable oil
- 1 c. water
- 1 lb. boneless round steak
- 1/2 tsp. pepper
- 3/4 c. chopped onion
- 1/3 c. chopped green pepper
- 1/2 c. uncooked rice
- 1 (28 oz.) can tomatoes (undrained)
- Trim excess fat from steak.
- Cut into serving size pieces. Combine flour, salt, paprika and pepper.
- Coat steak in flour. Reserve excess flour mixture.
- Saute onion and green pepper in hot oil in a large skillet.
- Remove vegetables and set aside.
- Brown steak on both sides in remaining oil.
- Add vegetables, rice, tomatoes and water.
- Sprinkle with reserved flour mixture.
- Cover and simmer for 1 hour, stirring occasionally.
