Spring Vegetable Tabbouleh
- 2/3 pound bulgur wheat
- 3/4 pound frozen peas
- 1 red pepper deseeded and diced
- 1 large tomato quartered, deseeded and diced
- 2 spring onions trimmed and finely sliced
- 1 lemon zest and juice
- 3 sprigs flat leaf parsley
- 3 leaves
- 2 sprigs mint
- 3 leaves
- 2 sprigs basil
- 3 leaves
- 4 tablespoons olive oil
- Cook the bulgur according to package instructions. Drain and leave to cool. Cook the peas in boiling salted water for about 5 mins, drain and cool under running water.
- To assemble, stir the peas into the bulgur along with the pepper, tomato, spring onions, a little lemon zest and the juice. Add the herbs, some salt and pepper and the oil. Garnish with the reserved herbs.
