Deviled Scrod
- 1 1/2 to 2 lb. scrod
- 1/4 c. chopped green pepper
- 1/4 c. minced onion
- 1 Tbsp. prepared mustard
- 1 tsp. Worcestershire sauce
- 1/8 tsp. Tabasco
- 3 1/2 Tbsp. lemon juice
- 1/2 c. butter
- 2 c. bread crumbs
- 2 Tbsp. grated Parmesan cheese
- Wipe scrod with damp cloth and cut into 4 portions.
- Combine green pepper, onion, mustard, Worcestershire sauce, Tabasco and lemon juice.
- Melt butter or oleo; stir in bread crumbs.
- Add to vegetable mixture; mix well.
- Season scrod to your taste; dot with additional butter or oleo.
- Place on foil-lined broiler rack with surface about 4-inches below source of heat.
- Broil 5 minutes. Remove from broiler.
- Turn scrod; top with bread crumb mixture. Return to broiler for 5 to 7 minutes.
- Sprinkle with Parmesan cheese.
- Broil for 1 minute.
