Black Bean, Salsa And Cheddar Taquitos With An Avocado Dipping Sauce
- corn tortilla
- sharp white cheddar shredded
- salsa
- canned black beans rinsed & drained
- scallion
- 1 avocado
- 1 tablespoon red onion finely chopped
- 1/4 cup light sour cream
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- salt to taste
- Preheat your oven to 385 degrees.
- Lay out a corn tortilla {NOTE: if they aren't pliable, no big deal. Simply warm slightly in a pan before filling}. Add a small amount of shredded cheddar, a little salsa, some black beans and a couple pieces of scallion.
- Roll up the tortillas nice and tight and place seam side down on a parchment lined baking sheet. Bake for 15 minutes.
- For the dipping sauce. Mash the avocado in a bowl. Stir in the red onion, garlic powder, chili powder, salt and sour cream.
