Fish Or Clam Chowder(New England Style-White)
- 2 potatoes, cubed
- 1 c. water
- 2 onions, diced
- 1 c. raw mushrooms
- 1 c. chopped green pepper
- 3 Tbsp. oil or butter
- 1/2 c. whole wheat or white flour
- 1 qt. milk
- 1 lb. fish fillets, cubed or clams, diced
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. tamari or soy sauce
- 3 Tbsp. chopped parsley
- 1/2 c. sherry wine (optional)
- Cook potatoes in water in a covered saucepan until tender. In another pan, saute onions, mushrooms and pepper in oil or butter until onions are golden.
- Slowly add flour to vegetable mixture, stirring gently but constantly, to coat all vegetables. Add milk slowly, stirring constantly, until smoothly blended.
- Add fish or clams, salt, pepper and tamari or soy sauce.
- Cook, covered, on medium heat for 15 minutes or until fish is tender. Stir occasionally to prevent sticking.
- Add parsley, sherry, cooked potatoes and potato water.
- Heat through and serve.
- Serves 6.
