Lemony Fish With Buttered Vegetables
- 3 1/2 ounces rice crumbs
- 2 teaspoons lemon pepper seasoning
- 1 egg
- 21 ounces white fish fillets firm
- 1 corn
- 7 ounces cauliflower cut into florets
- 7 ounces broccoli cut into florets
- 5 1/4 ounces frozen peas
- 1 1/2 tablespoons butter
- 1/4 cup vegetable oil
- lemon wedges to serve
- Combine rice crumbs and seasoning mix. Whisk egg in a shallow bowl. Dip fish in egg then coat in rice crumb mixture. Cover and chill for 10 mins.
- Meanwhile, steam vegetables until tender. Remove kernels from cob then combine vegetables in a large bowl. Add butter and toss until combined. Season. Cover with foil to keep warm.
- Heat oil in a large frying pan over medium heat. Add fish and cook for 2-3 mins per side, or until fish is golden brown and cooked to your liking. Drain on paper towels.
- Serve fish with vegetables and lemon wedges.
