Blueberry Banana Oatmeal Pancakes
- 1/2 cup pancake mix complete
- 1/2 cup old fashioned oats
- 1/2 cup greek yogurt 0% fat
- 1/2 cup milk
- 1 cup frozen blueberries thawed
- 1 banana
- 2 tablespoons maple syrup or honey, optional
- Preheat skillet on medium heat
- Put pancake mix and oatmeal in a medium sized bowl, mix well
- Add milk and yogurt to the mixture, being sure to stir well
- Add thawed blueberries to the mixture, being sure to evenly distribute them
- Spray skillet with nonstick cooking spray, such as Pam
- Pour batter into skillet, making the size of the pancake roughly 5-6 inches in diameter
- Let pancake cook for roughly 2-3 minutes until the formation of bubbles appear on top, flip pancake over and let cool 2-3 more minutes until each side is golden-brown
- Use remaining batter to repeat steps 6 and 7
- Serve by topping pancakes with banana slices and optional maple syrup or honey
- Enjoy
