Muffuletta Sandwich
- 25 foccacia bread herbed
- arugula As needed
- 1 1/2 pounds mortadella
- 1 1/2 pounds honey ham
- 1 1/2 pounds prosciutto
- 1 1/2 pounds smoked mozzarella cheese
- salad As needed olive
- 25 olives
- 25 pieces pork jerky
- 1/4 teaspoon allspice
- 1/4 teaspoon dill seed
- 1/4 teaspoon mustard seed
- 1/4 teaspoon black pepper
- 4 cups pork fat room temperature
- 1 cup kalamata olives pitted, chopped
- 1 cup Queen olives pitted, chopped
- 1/4 cup capers minced
- 1 red onion minced
- 1 bulb fennel thinly sliced
- 1 grapefruit zested and juiced
- 1 orange zested and juiced
- 1 lemon zested and juiced
- 1/4 cup Italian parsley minced
- 1. Toast and grind all spices and whip into pork fat
- 1. Mix all ingredients together and reserve
