Orange Glazed Boneless Cornish Game Hens
- 1/2 cup finely chopped onion
- 1/2 cup mushrooms finely chopped
- 1/4 cup sliced almonds
- 1/4 cup butter or margarine
- 1 1/2 cups cooked rice or, you can use wild rice, long grain rice
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon dried thyme
- 2 tablespoons grated orange peel
- 2 cornish game hens deboned is possible
- 1/2 cup orange juice
- 1/8 cup honey
- 1/8 cup vegetable oil
- 2 teaspoons grated orange peel
- In a skillet, saute the onion, mushrooms and almonds in butter.
- Add rice, sugar, salt, thyme and orange peel; mix well.
- Loosely stuff hens.
- Place, breast side up, on a rack in a shallow baking pan.
- In a small bowl, combine glaze ingredients; spoon some over hens.
- Bake, uncovered, at 350 degrees F for 35 minutes.
- Cover and bake 35 minutes longer until juices run clear, brushing often with remaining glaze.
