Coriander Couscous With Tuna Fillets, And Garlic And Oregano Croutons

  1. Place the couscous in a bowl, and pour in boiling water, with a pinch of salt, and a drizzle of olive oil.
  2. When the water is completely absorbed separate the grains with a fork.
  3. Sprinkle with lemon juice, and add the coriander and sweet corn. Mix well.
  4. Heat a saucepan, and add the bread.
  5. Drizzle with a little bit of olive oil, sprinkle with oregano and garlic, stir and toast.
  6. Place the couscous in a large platter, add croutons, and tuna fillets.
  7. Garnish with coriander leaves, and a wedge of lemon.
