Coriander Couscous With Tuna Fillets, And Garlic And Oregano Croutons
- 7/8 cup couscous
- 7/8 cup boiling water
- salt
- olive oil
- 1/2 lemon juice
- 2 tablespoons fresh coriander chopped
- 4 tablespoons sweet corn
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic crushed dried
- 1 can tuna fillets
- 1 slice bread Alentejo, cut in small squares, or other dense bread
- Place the couscous in a bowl, and pour in boiling water, with a pinch of salt, and a drizzle of olive oil.
- When the water is completely absorbed separate the grains with a fork.
- Sprinkle with lemon juice, and add the coriander and sweet corn. Mix well.
- Heat a saucepan, and add the bread.
- Drizzle with a little bit of olive oil, sprinkle with oregano and garlic, stir and toast.
- Place the couscous in a large platter, add croutons, and tuna fillets.
- Garnish with coriander leaves, and a wedge of lemon.
