Orange Pound Cake

- 1 tsp. all-purpose flour
- 1 3/4 c. all-purpose flour
- 3/4 c. sugar
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. grated orange rind
- 2/3 c. fresh orange juice
- 1/4 c. vegetable oil
- 4 large egg whites
- Preheat oven to 350u0b0. Spray bottom of an 8 1/2 x 4 1/2-inch loaf pan with cooking spray; dust with 1 teaspoon flour. In a bowl, combine 1 3/4 cups flour, sugar, baking powder and salt. Combine orange rind, juice and oil; add to flour mixture. Beat at medium speed of an mixer until smooth (batter will be thick). Beat egg whites in small bowl with mixer at high speed until stiff peaks form. Fold egg whites into batter. Pour batter into prepared pan. Bake at 350u0b0 for 55 minutes or until a wooden pick inserted comes out clean. Let cake cool in pan 10 minutes on a wire rack; remove from pan and let cool completely on wire rack. Yield: 16 servings.
