Spinach Cottage Cheese Casserole
- 1 large egg
- 6 large egg whites
- 1/2 cup sweet onion or yellow, chopped
- fat free cottage cheese 1/2 cup of low-
- 12 ounces frozen spinach well-drained or fresh spinach steamed and drained
- dill
- Preheat oven to 375u0b0F. Coat 9-inch pie plate, preferably nonstick, with cooking spray and set aside.
- Prepare the spinach and make sure well-drained.
- Saute the well-chopped onion.
- Combine the one large egg and six large egg whites. Mix well. Combine with the cottage cheese.
- Evenly spread the spinach and onion in pie plate. Then pour the egg and cottage cheese mix over the spinach and onion.
- Bake in oven for 30 minutes (or more depending upon altitude) until egg and cottage cheese mixture solidifies.
- Let sit for five minutes and then cut into wedges.
