Spinach Cottage Cheese Casserole

  1. Preheat oven to 375u0b0F. Coat 9-inch pie plate, preferably nonstick, with cooking spray and set aside.
  2. Prepare the spinach and make sure well-drained.
  3. Saute the well-chopped onion.
  4. Combine the one large egg and six large egg whites. Mix well. Combine with the cottage cheese.
  5. Evenly spread the spinach and onion in pie plate. Then pour the egg and cottage cheese mix over the spinach and onion.
  6. Bake in oven for 30 minutes (or more depending upon altitude) until egg and cottage cheese mixture solidifies.
  7. Let sit for five minutes and then cut into wedges.
