Grilled Cheese
- 1/2 loaf sourdough bread enough for 6 slices
- 3 tablespoons butter
- 1 ounce white cheddar
- 1 ounce muenster
- 1 ounce gruyere
- 6 tablespoons caramelized onions
- 1 tablespoon fresh basil
- 1 teaspoon fresh thyme
- 1 tomato
- Cut sourdough into 6 thick slices. Grate or slice cheeses.
- Roughly chop basil and thyme. Cut tomato into slices.
- Add butter to a hot pan, let melt. Turn heat down to low.
- Assemble one grilled cheese in the pan, or all of them side-by-side if you have space in the pan: Butter bread, put buttered-side-down bread into hot pan. Top with cheese, onions, a slice of tomato, and a scattering of herbs. Top with another slice of buttered bread.
- Let this brown nicely, and then flip. Press down with spatula to encourage browning.
- Repeat with the other two sandwiches if doing them one at a time. Serve hot.
