Panforte

  1. Preheat oven to 300u0b0F. Lightly grease and line an 8 inch springform cake pan with parchment paper.
  2. In a large bowl, combine dates, cherries, almonds, chocolate, spices and orange zest. Set aside.
  3. In a medium saucepan, combine sugar, honey and butter. Gently heat, stirring, until beginning to melt. Bring to a boil and cook, without stirring, for 3-5 mins, until caramelized. Working quickly, pour over nut mixture and mix until combined. Transfer to prepared pan and smooth top. Bake for 10-15 mins. Let cool.
  4. Dust with powdered sugar then cut into small wedges.
