Homemade Cereal Bars
- 1 1/2 cups oats
- 1/2 cup chopped almonds coarsely
- 1/4 cup pistachios coarsely chopped
- 1/8 cup flax seeds
- 1/8 cup sesame seeds
- 1/8 cup chia seeds
- 1/4 cup dried cranberries
- 1/4 cup maple syrup
- 1/4 cup peanut butter
- Toast oats in oven for about 10 minutes at 350 degrees Fahrenheit.
- Mix oat, almonds, pistachios, flax seeds, sesame seeds, chia seeds, and dried cranberries in a large bowl.
- In a small saucepan, mix maple syrup and peanut butter. The mixture should be warm and smooth. Add it to the cereal and nut mixture, mix well.
- Spread the mixture evenly with a spatula on a baking sheet lined with parchment paper.
- Refrigerate for at least 1 1/2 to 2 hours, or in the freezer for 30 minutes.
- Remove from refrigerator and chop into even bars.
- Store in airtight container for a few days.
