Cheese And Fennel Seed Sablè Shortbread Sticks
- 1 3/4 cups flour
- 1/2 cup almond flour
- 1 1/2 cups grated Parmesan cheese
- 11/16 cup butter
- 1 tablespoon fennel seeds
- 2 tablespoons ice water
- ground black pepper
- salt
- Preheat the oven to 180 degrees Celsius.
- Add the flours, cheese, butter, fennel, water, and a pinch each of black pepper and salt to a mixing bowl.
- Place all the ingredients in the mixer with two tablespoons of ice water, turn on the mixer for just long enough for the ingredients to begin coming together into a ball.
- Transfer the dough onto a floured work surface. Knead it quickly, shape it into a ball, cover it in plastic wrap, and refrigerate it for 1 hour.
- Roll the dough out onto the work surface to 1 centimeter thickness, flour it and cut it into sticks measuring 1 centimeter by 6 centimeters.
- Place the sticks on a parchment paper-lined baking sheet and bake for approximately 10 minutes or until golden brown.
