Pork In Creamy Onion And Saffron Sauce
- 1 pinch saffron
- 3 1/2 tablespoons butter high quality
- 3 white onions large, finely sliced in rings
- chuck steak 800 gr.-1 kl. pork, diced
- 1 stock meat, cube
- ground black pepper Freshly
- 7 ounces button mushrooms whole
- 4 tablespoons cream thick
- Place the saffron in glass with 2 tsp. warm water and leave to infuse.
- Heat the butter in a large heavy pan.
- Add the pork to the pan and saute.
- Add the onion slices and mushrooms and stir well to blend with the butter.
- Reduce the heat to minimum. add the saffron in water, stock cube, and pepper. Mix well.
- Cover and simmer for 1 hour to allow the juices to run. Add a little more water if necessary to avoid drying out.
- Remove the lid and continue to cook for another 30 minutes.
- Add the cream and serve immediately.
- If serving later, reheat and add the cream just before serving.
