Pork In Creamy Onion And Saffron Sauce

  1. Place the saffron in glass with 2 tsp. warm water and leave to infuse.
  2. Heat the butter in a large heavy pan.
  3. Add the pork to the pan and saute.
  4. Add the onion slices and mushrooms and stir well to blend with the butter.
  5. Reduce the heat to minimum. add the saffron in water, stock cube, and pepper. Mix well.
  6. Cover and simmer for 1 hour to allow the juices to run. Add a little more water if necessary to avoid drying out.
  7. Remove the lid and continue to cook for another 30 minutes.
  8. Add the cream and serve immediately.
  9. If serving later, reheat and add the cream just before serving.
