Hearty Goulash Pasta Soup
- 1 pound sirloin steak beef, cubed
- 1/4 cup flour seasoned with salt and pepper
- 2 tablespoons olive oil
- 1 onion large, sliced
- 1 red pepper seeded and thinly sliced
- 1 clove garlic crushed
- 1 tablespoon smoked paprika
- 1 tablespoon tomato paste
- 4 cups beef stock
- 1/2 cup dry red wine
- 1 bay leaf
- 4 ounces rotini pasta
- sour cream
- chopped parsley
- crusty bread
- Toss steak in seasoned flour, shaking off excess.
- Heat 1 tbsp of the oil in a large saucepan on high heat. Cook steak for 3-4 mins, until browned. Remove from pan.
- Heat remaining 1 tbsp oil in same pan on medium-high heat. Add onion, pepper and garlic. Saute for 4-5 mins, until tender. Add paprika, stirring for 1 min until fragrant. Mix in tomato paste.
- Return steak to pan. Stir in stock, 2 cups water, wine and bay leaf. Bring to a boil. Add pasta and reduce heat to medium. Cook for a further 10-15 mins, until pasta is tender.
- Serve soup with a dollop of sour cream and a sprinkling of parsley. Accompany with crusty bread.
