Queen'S Pralines
- 1 heaping kitchen spoon sugar
- 2 c. sugar
- 3/4 c. milk
- pinch of soda
- 1/3 stick margarine
- 1 tsp. vanilla
- 2 c. pecans
- In heavy skillet over medium heat, cook kitchen spoon of sugar until carmelized and medium brown color.
- In large saucepan, cook 2 cups sugar and milk until it boils; remove from heat and add soda.
- Stir thoroughly (mixture will be frothy).
- Return to heat and again bring to rolling boil.
- Remove from heat and stir in carmelized sugar; stir well.
- Return to heat and cook to soft ball stage, stirring frequently.
- Then add margarine, vanilla and pecans.
- Stir until mixture starts to harden and loses its gloss. Drop by spoonful onto waxed paper.
- (I place pan in cold water to speed hardening.)
- Makes 18 to 24 pralines depending on size desired.
