Yellow Rice And Chicken
- 1 1/2 c. saffron-tinted rice
- 3 chicken breasts
- 6 chicken thighs
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 can condensed cream of chicken soup
- 1 can condensed cream of celery soup
- 1 can condensed cream of mushroom soup
- 2 1/2 c. milk
- 1 1/2 c. crushed potato chips
- 1/2 c. melted butter or margarine
- 1/8 tsp. paprika
- Place rice in bottom of well-greased 13 x 9 x 2-inch baking pan.
- (Regular white rice may be used, but yellow rice is attractive.)
- Cut chicken breasts in halves.
- Arrange chicken pieces over rice, preferably in one layer.
- Sprinkle with salt and pepper.
- Blend the three kinds of soup together with milk.
- Pour over chicken; top with potato chips and then pour butter over all. Sprinkle with paprika.
- Bake in slow oven (325u0b0) for 2 hours or until tender.
- Makes 8 servings.
