Mighty Meatloaf
- 1 lb each ground lamb, pork, beef
- 2 eggs
- 1 cup milk
- 1 Tablespoon Worcestershire
- 1 teaspoon salt
- 1 Tablespoon Dijon mustard
- 1 teaspoon cracked black pepper
- 2 cups bread crumbs
- 1 large white onion, diced and sliced in half-inch slices
- bunch fresh parsley, with stems removed
- 6 thick slices bacon
- Mix eggs, milk, seasonings, and crumbs.
- Let stand 5 minutes. Add the diced onion, parsley.
- Line the baking dish with onion slices and then lay bacon cross-wise across (to be bottom of loaf). Gently mix meat into mixture and fill pan.
- Bake at 350 deg until meat thermometer reads 170 deg, about 90 minutes.
- Serve with parsley infused mashed potatoes.
- Serves many.
