Rotelli With Roasted Garlic & Gruyere Sausage

  1. Cook the pasta in a large pot of well-salted boiling water until al dente. Drain.
  2. While the pasta cooks, heat the olive oil in a large saute pan. Add the sausage and saute for 2-3 minutes, until it begins to brown. Stir in the garlic, artichoke hearts, red pepper, broccoli and cauliflower and saute another 30 seconds. Stir in the white wine and chicken stock. Bring to a boil, reduce heat and simmer until reduced by half. Stir in the cold butter. Toss with the cooked pasta and cheese.
  3. Season to taste with salt and pepper.
