Greek Style Macaroni Cheese
- 12 ounces elbow macaroni
- 2 tablespoons butter
- 2 tablespoons flour
- 3 cups milk
- 4 ounces baby spinach
- 10 cherry tomatoes halved
- 1/3 cup pitted black olives sliced
- 4 green onions sliced
- 1 tablespoon chopped parsley
- 3/4 cup cheddar cheese grated
- 2 tablespoons grated Parmesan
- 2/3 cup crumbled feta cheese
- 1 tablespoon oregano leaves

- Cook the pasta in large saucepan on boiling salted water according to package directions.
- Melt butter in a large saucepan on medium heat. Add flour and cook, stirring, for 1 min. Remove from heat. Blend in milk until smooth. Return to heat and cook, stirring, until sauce boils and thickens. Reduce heat to low and simmer for 3 mins. Season to taste.
- Add spinach, tomatoes, olives, onions and parsley to sauce. Cook, stirring, for 3-5 mins.
- Preheat the broiler to high. Drain pasta. Add to sauce with Cheddar and Parmesan cheeses; mix well. Divide among 4 ovenproof gratin dishes. Sprinkle with feta and oregano.
- Broil for 1-2 mins, until cheese is golden. Serve with salad and crusty bread.
