Fresh Cranberry Apple Salad

  1. Dissolve gelatin in boiling water and cool.
  2. Stir in orange juice and chill until mixture is syrupy.
  3. While gelatin is cooling, run cranberries and orange through food chopper, using fine blade. Cut one cored but unpeeled apple into small bite size pieces.
  4. Add nuts and sugar.
  5. Combine with cranberry mixture and fold into slightly thickened gelatin.
  6. Core and slice remaining apple; brush slices with lemon juice and edge mold with them.
  7. Spoon gelatin into a one-quart star-shaped mold or six individual molds.
  8. Chill until firm in the fridge.
  9. Unmold on platter lined with salad greens.
  10. Serve with cream cheese, mayonnaise or cinnamon-spiced whipped cream.
  11. Serves 8.
